Spicy Chipotle Lime Mayo
Recipe
1 cup light mayo (or olive oil mayo)
1-2 chipotle peppers (in adobo sauce)
Juice of ½ a lime
Zest of 1 Lime
Cooking Instructions:
Start by taking 1-2 peppers out of the adobo sauce from the can. If the peppers have a stem, remove them at this time and split the peppers in half. Scoop out the seeds with a spoon and toss them away. Put the pepper(s) along with the mayo in to the food processor. Zest the entire lime into the mixture. Cut the same lime in half and squeeze the juice of half a lime into the mixture. Then put the food processor on medium for 30-40 seconds. Check to make sure all the pepper pieces are being diced evenly. Once you have the texture you are looking for you are ready to serve! This goes great with a healthy burger on a whole wheat bun or you can also serve it as a spicy dip with some tang!
