    Healthy Chunky Guacamole

    Recipe

    2 medium avocados
    1 small onion
    1.5 small tomatoes
    ½ stalk cilantro
    ½ large lemon
    1 jalapeño
    ½ teaspoon salt
    ¼ teaspoon black pepper

    Cooking Instructions
    Begin by cutting the avocado in half and removing the seed. Once the seed has been removed, cut the avocado in slices and then score the slices to create cubes of avocado. Use a spoon to neatly scoop out all the cubes from the avocado skin. Place your avocado cubes into a bowl large enough to mix all of the above ingredients. Next, remove the skin off of the onion and chop the entire onion. Chop the tomatoes into half inch pieces and add both ingredients to the bowl. Remove cilantro from its stems and finely chop the cilantro leaves. Next, take the outer stem off the jalapeño and cut the pepper length wise down the middle. Remove the seeds and stems from inside of the pepper and finely dice the rest of the jalapeño. Add in the cilantro and jalapeño to the bowl and gently mix the ingredients together. Squeeze the juice of half a lemon and add it to the mixture along with the salt and pepper. Finally, mix the entire mixture, softening some of the avocado pieces and leaving a few avocado cubes whole in the guacamole. This chunky guacamole can be served with tacos, chips, or even with vegetables.
