    Whole Wheat Oatmeal Chocolate Chip Cookies

    Chocolate Chip Cookies are always a good idea, maybe not for your physique but that’s when @erin_martian comes in.

    Whole Wheat Oatmeal Chocolate Chip Cookies
    ¾ cup rolled oats
    1 cup whole wheat flour
    ½ tsp. baking soda
    ½ tsp. salt
    ¼ cup butter (half a stick)
    ¼ cup canola oil
    1/3 cup granulated sugar
    1/3 cup light brown sugar
    1 large egg
    1 tsp. vanilla extract
    ½ cup chocolate chips
    1 T. ground flax seeds

    Grind oats and the flax seeds together in a food processor until roughly chopped. In a separate bowl combine oats, flour, baking soda, and salt. Cream your butter, oil, and sugars until light and fluffy. Add egg and vanilla to the creamed mixture until evenly combined. Slowly incorporate the dry ingredients. Mix in the chocolate chips. Roll into balls and refrigerate for 20 minutes then bake for 12 minutes at 350 degrees.
    My Brother-in-law tells a story about how for the first 10 years of his life his mom convinced him and his brothers that granola bars were cookies. So instead of craving and asking for actual cookies, they asked for granola bars and were able to snack on something a little healthier. Eventually they all caught on, but that’s beside the point. The point it that this recipe is healthier so you can feel good about giving it to a child, but it’s also delicious so your kids will be none the wiser! It’s also an actual cookie, and not a granola bar or a prune or something, so you don’t have to feel guilty about scamming your own child. I like this cookie slightly under baked to ensure its soft enough for me in the middle. Its lighter in fat and sugar, so it won’t spread as much on the baking sheet. Because of this push the cold cookie dough balls down slightly before baking.
